What I’m Loving… Avocados

I’m seriously trying to talk my husband into getting these amazing tattoos.  He thinks I’m taking my love for avocados too far, but when it comes to avocados, I strongly believe there’s no such thing.

Ok, fine.  That’s weird.  I would never get a REAL avocado tattoo…that’s the pits. Get it?  Like an avocado pit?  Oh man, I’m losing it.  Somebody call the produce aisle, because I need an avocado intervention!

All kidding aside, I really do love avocados and lately I have been using them in everything.  The good news is, they’re great for your skin and hair, amongst many other things.  The bad news is, they’re loaded with fat.  The “good” fat, but still fat.  According to fitsugar.com, you should not consume more than 1/2 an avocado per day.  If you can resist overeating this magical fruit, more power to you.  I can’t.  So, I thought I would share with you a few ways I have been overdosing on this delicious fruit.

-Egg salad mayonnaise substitute.  My husband’s all time favorite.  Easy enough, make a traditional egg salad, but instead of using mayonnaise mash in an avocado, instead.  *I like to use mayonnaise mixed with mustard on the bread or cracker.  It just gives it an extra kick of flavor. 

-Mashed with chickpeas, like in this chickpea and avocado salad sandwich.

-Over pasta.  I follow this creamy avocado sauce recipe.

-Cubed and mixed into black bean soup.  *If you are looking for an easy pre-made black bean soup (great for lunch) you must try Dr. McDougall’s all natural soup.  Complete Protein, Vegan, Gluten Free and No BPA.  In other words, win, win, win and win.

-On top of this southwestern bbq ranch quinoa salad.

-Sliced and served on top of scrambled eggs.

-Cubed and mixed with beets.  *I LOVE Trader Joes steamed and peeled baby beets.  I usually mix one package of beets, with one cubed avocado, some cherry tomatoes and Trader Joes pea shoots.  Top with oil, balsamic vinegar, gorgonzola cheese, salt and pepper.  Trust me, DELICIOUS.

-Guacamole with chips, burgers, tacos, ANYTHING.

-Simply eaten with a spoon and a dash of salt and pepper.

There is a lot more where that came from, but you should have a few ideas to tide you over for now.

I am going to turn into an avocado.  And I don’t even care.

What I’m loving is avocados.
